Fresh Three-Bean Vegan Chili

Finger-licking good!

Ingredients:

  •  1 Bag of Red Kidney Beans

  • 1 Bag of Black Beans

  • 1 Bag of Red Lentils

  • 40 Garlic Bulbs

  • 1/2 Purple Onion

  • 1 Green Pepper

  • 1 Yellow Pepper

  • 1 Red Pepper

  • 32oz Vegetable Broth

  • 1 cup of Water

  • 3 Tbsp of chili powder

  • 3 Tbsp of paprika

  • 3 Tbsp of Onion powder

  • Optional items: Canned beans, Vegan Cheese (Daiya), Quinoa

Cooking Preparation:

  •  Place beans in a bowl and let soak for 8–12hrs

  •  In a large pot heat olive oil over medium heat, sauté onions, and fresh garlic for 5-7 minutes, or until translucent.

  • Add the beans, tomatoes (optional), broth, water, and seasoning, bring to boil, reduce heat, and simmer for 15-20 minutes, stirring occasionally.

  • Add more water and seasoning if necessary. If using fresh beans chili can take up to 60 minutes.
