Vegan Earth Grain Bowl
Ground down with this Mediterranean-inspired Vegan Earth Grain Bowl recipe. It provides greens, healthy fats, protein, and grains to fuel and nourish your body.
Base & Veggies
3 Cups spinach or arugula
1/2 cup quinoa, sorghum, or rice
1/2 english cucumber, diced
1/2 cup grape tomatoes halved
1/2 cup broccoli halved
2 radishes chopped
1/3 cup Crispy Chickpeas (Garbanzo Beans) o 1/3 cup of garbanzo beans o 1 tablespoon of olive oil o 1 teaspoon of paprika o salt and pepper to taste
Dressing • 2 tablespoons lemon juice • 1 tablespoon balsamic vinegar • 1 tablespoon extra-virgin olive oil • 2 tablespoons chopped fresh parsley • 1 tablespoon chopped fresh basil • 1/2 teaspoon ground black pepper • 1/2 teaspoon fresh ground sea salt
Optional Toppings • Hummus • Avocado • Kalamata Olives • Capers • Hemp hearts • Fresh lime Squeeze • Sprouts (alfalfa, sunflower, broccoli) • Pickled onions
Step 1: Make Crispy Chickpeas Preheat oven to 400°F, coat garbanzo beans with 1 tablespoon of olive oil, salt, pepper, and paprika. Roast for 30-40 minutes until crispy
Step 2: Prepare quinoa according to directions
Step 3: Prepare dressing. Add all 'DRESSING' ingredients to a small bowl and mix well. Set aside.
Step 4: Assemble your Vegan Earth Grain bowl. In a serving bowl add all 'BASE & VEGGIE' ingredients. Pour dressing and toss.
Step 5: Add desired 'TOPPINGS' and enjoy!
